Swedish Fika Cake

This was a new one for us. We have never been to Sweden, or had the opportunity to experience their “Fika” moments during the day that stop for coffee and brief get-togethers. I like the idea of that!

We are told, it is such a part of Swedish life that companies big and small have Fika twice a day. I think that is a tradition most of us could get use to.

The cake is a moist, tender, butter base for an amazing topping…it is really what steals the show. This was confirmed by all my tasters haha. They said the cake was good, but the cake with the topping…divine!

So, what is the topping?!

I have never made it before…more of a shell, than a frosting or icing that is more traditional. Super easy to make, which makes it even better! Once the cake has cooked for about 30 min, you melt down butter, sugar, sliced almonds, flour, and milk…mixing nonstop until it thickens and you can see a track left while stirring. This is spread on your cake, and then popped back into oven for another 15 min or so, until the topping is golden.

The cake cools and the topping hardens a bit more, creating a shell on top. Everyone who tried this, loved the cake…but really the topping is what makes the cake. The cake is good, but seems more of a vehicle to deliver the delicious top haha.

This is a butter cake, with a butter topping…so not an everyday treat, but…I know everyone would be happy to see me bake this one again.
