Blueberry-Buttermilk Bundt Cake

This summer-time delight we are told is simple and not too sweet…allowing the blueberries to be the star of the show…and that is the point.

The oil and buttermilk make this cake very moist and tender…very similar to a “Nothing Bundt Cake” if you are familiar with the chain. I didn’t think anything was particularly hard with this cake but we are cautioned it can be a sticker…to make sure you are oiled and floured.

It is so funny when you get to that moment of truth. I had flipped the pan over and was waiting a minute…then you hear the “thump”…on one hand you are YAY…the other, you are thinking…oh gosh was that the whole thing or just a portion haha! Thankfully, mine was a full thump and I was very pleased. 😂

Everyone loved this cake…especially for breakfast. Since it isn’t too sweet, it lent itself beautifully to accompany a cup of coffee. Personally, I really enjoyed the cake but it would have been EVEN better with some icing drizzled on top.

This one’s a keeper!

Speaking of being a keeper…the good news keeps coming in our house…which is a really weird thing to say with all the craziness going on in the world. Our son got engaged last week to his long time girlfriend. We couldn’t be happier for them, and for us! ❤️❤️ What a glimmer of hope and respite from all the uncertainty we are all feeling these days!

  1. Congratulations to that good-looking young couple and the parents. Don’t you love to see your kids so happy? Where are they? I liked everything about this cake and all the things you pointed out. I also am nervous every time I unmold a cake and this time was no different. In fact I was a bit more nervous because Dorie had warned us. But I also heard the one thump!

    • Thank you Mary!!…and yes, seeing your kids happy is THE best! 😍. They got engaged on a hike called North Fork Trail Big Pines Lake…near Mammoth in central California. It is backpacking country so it was perfect for social distancing.
